The kabotcha is a Japanese variety of winter squash. Kabocha has a deep green skin with lighter stripes. The inside flesh is orange and has a very sweet taste. There are different types of kabocha, the favourite one is called kuri kabocha (kuri meaning with a taste of chestnut). Kabocha is cooked many different ways, one of which is called kabocha nimono (simmered kabocha).
