About "sake" (nihoshu - 日本酒) :

In Japanese 'sake' means any alcoolic beverage. Japanese rice alcool is called 'Nihonshu'. Making 'Nihonshu' is closer to beer as the rice is cooked and some special fungus is produced and added to the fermented rice starch. 'Nihonshu' reaches usally around 15% of alcool.

There are a lot of different qualities of 'Nihonshu'. Depending on the season, it's type and the taste of the drinker, 'Nihonshu' is served chilled, at room temperature or warmed.

Potters often give a special shape to the 'Nihonshu' pots by flattening them with their thumb.
