About "rakugan sweet" (raku gan - 落雁) :
Rakugan sweets are made of sugar, starch (rice powder or potato starch) and some colourings. They are pressed in a mold to form traditional shapes. Rakugans are part of the 'dry confectionery' of Japan called 'Higashi' (干菓子 or 乾菓子). Rakugans are an ideal gift and are often used during the tea ceremony to counterbalance the bitterness of the tea.
